The philosophy of Vittorio Capovilla is quite simple. He seeks, finds and uses only raw materials of the highest quality, as he perceive this as absolutely crucial for the end result. The distillation itself is a laborious process, but the method he uses is solely to bring out the best possible properties in the raw materials he distills. All fruit, berries, grapes, beer base or wine base are organically grown. He grows many of the fruits he uses himself, while grapes, wine and beer are specially produced and delivered to him by carefully selected suppliers / partners. He is known as one of today's most skilled distillers and as he says; "I can not make good things from bad ingredients but I can make good ingredients even better".
Vittorio worked as a mechanic for the wine industry until the early 1980s when he decided to pursue his passion for distillation. He has made his own distillery and developed methods and mechanical innovations that take care of the ideology of bringing out the taste in the raw material. He is uncompromising when it comes to production. If the raw material is not good enough, he does not produce. If the result is not something he can vouch for, he does not sell it. He uses the "Bagno Maria" method, double distills, uses no additives or sugar during any part of the process. He collects untouched water in the Alps for use in the products he distills in Italy and uses only rainwater for the room he distills on Marie Galante. This combined with the fact that he has a very small distillery, and that some of the raw materials are hard to obtain, means that there is a very limited production and products are occasionally sold out. If you take into account that the way he distills requires 8 times longer than most other distillers, this means that the prices are quite high, but as one of many Vittorio quotes: «If I drink, I drink little if it is expensive. I rarely drink if I'm broke. But regardless, I only drink the best».
"I raise my distillates by storing them in small steel barrels that are exposed to seasons, high pressure, low pressure, temperature fluctuations and more. As a result, when you drink the last sip of a bottle, even a year after opening, it is exactly as good as the first sip».
Vittorio personally controls all the raw materials, fermentation and distillation. He uses spontaneous fermentation and double distills according to the Bagno Maria method. Everything is grown organically, in addition, the sugar cane plantation on Marie Galante is run according to biodynamic principles. For example, the sugar cane can only be transported by ox and cart as in the old days. It's all about bringing out the unique properties of the raw materials when the product has been distilled and the way to do it must be sustainable in relation to nature.
